AMF is more stable and easier to purify than its counterpart, HMF, which is difficult to produce on a large scale due to inefficiencies and waste. AMF has a variety of potential applications, including as a sweet taste modulator in food and beverages, and as a safe bio-based building block in the production of monomes for plastics and polymers and other diverse value-added materials.
